At TEWATASHI, we prioritize the safety and well-being of our guests by providing comprehensive information on the ingredients used in our dishes. This includes not only allergens but also ingredients that may be restricted due to dietary preferences or medical conditions. Please review the menu items below along with their ingredients and notify our staff of any dietary restrictions prior to ordering. Where possible, we will modify or substitute dishes accordingly.

Course Menus and Dishes

Aburi Omakase

This course includes Dishes No. 1, 2, 5, 6, 8, 9, 12, 13, 14, 15, 16 and 19.

Izakaya Omakase

This course includes Dishes No. 1, 2, 3, 4, 8, 12, 13, 14 and 15.

Nigiri Omakase

This course includes Dishes No. No. 1, 2, 3, 4, 7, 8, 12, 13, 14, 15 and 16.

Hoshi Omakase

This course includes Dishes No. No. 1, 2, 6, 9, 10, 11, 12, 13, 14, 15, 17, 18 and 19.

Menu Items and Ingredients

1. Chicken Ham

Ingredients: Chicken breast, salt, Hondashi (bonito stock), olive oil, spinach, sesame seeds, light soy sauce (soybeans, wheat), sugar, green onion, ginger, sunflower oil, sesame oil, shichimi pepper, radish.

2. Japanese Rolled Omelette

Ingredients: Eggs, bonito dashi, mirin, light soy sauce (soybeans, wheat), salt, potato starch, seaweed.

3. Yakitori Vegetarian

Ingredients: King oyster mushroom (Eryngii), sake, soy sauce (soybeans, wheat), olive oil, sansho pepper.

4. Lightly Pickled Vegetables

Ingredients: Chinese cabbage, daikon radish, carrot, tomato, radish, kombu dashi (kelp broth), rice vinegar, sugar, soy sauce (soybeans, wheat), salt, MSG, chili pepper.

5. Sukiyaki

Ingredients: Beef, soy sauce (soybeans, wheat), mirin, sake, green onion, miso, chili pepper, sesame, agar, wheat, soybeans, gelatin.

6. Red-White Tartar

Ingredients: Tuna, Blue crab, Olive oil, Salted kelp.

7. Gindara Saikyo Yaki
(Miso-marinated Black Cod)

Ingredients: Black cod, salt, white miso (rice, soybeans), sugar, mirin, rice vinegar, bonito broth, light soy sauce, daikon radish, potato starch, shiso leaf, mint.
Allergens: Fish (black cod), soy, alcohol (mirin).

8. Scallop Carpaccio

Ingredients:Scallop, summer truffle, bonito broth, fresh cream, salt, Tosazu jelly (bonito broth, rice vinegar, mirin (alcohol cooked off), light soy sauce (soybeans, wheat), halal gelatin)
Allergens:shellfish, fish, soy, gluten, dairy, alcohol

9. Spring Vegetable Shiraae

Ingredients:Tofu, walnut, cream cheese, light soy sauce (soybeans, wheat), sugar, seasonal vegetables (varies by availability)
Allergens: soy, tree nuts (walnut), dairy, gluten

10. Chilled Corn and Cauliflower Soup with Caviar

Ingredients:Caviar, corn, cauliflower, bonito broth, fresh cream, salt, light soy sauce (soybeans, wheat)
Allergens:fish, soy, gluten, dairy, egg (may be present in caviar depending on processing)

11. Grilled Wagyu with Saikyo Miso & Simmered Oyster with Sansho

Ingredients:Wagyu beef, oyster, Saikyo miso (rice, soybeans), mirin (alcohol cooked off), sugar, rice vinegar, soy sauce (soybeans, wheat), sake (alcohol cooked off), sansho pepper
Allergens:beef, shellfish, soy, gluten, alcohol

12. Sushi Rice

Ingredients: Rice, rice vinegar, sugar, salt, kombu.

13. Pickled Ginger

Ingredients: Ginger, rice vinegar, sugar, salt, kombu.

14. Nikiri Soy Sauce

Ingredients: Soy sauce (soybeans, wheat), mirin, sake, kombu.

15. Red Miso Soup

Ingredients: Hatcho miso (soybeans), Inaka miso (soybeans, rice), bonito dashi, tofu.

16. Kuzu Mochi (Japanese Arrowroot Cake)

Ingredients: Kuzu flour, sugar, roasted soybean flour, salt.

17. Daifuku (Mochi with Strawberry and Red Bean)

Ingredients:Glutinous rice flour, sugar, adzuki beans, strawberry, potato starch
Allergens:none (※Depending on production environment, may contain traces of soy or nuts)

18. Matcha Affogato

Ingredients:Milk, fresh cream, butter, sugar, egg, vanilla essence, matcha green tea powder
Allergens:dairy, egg

19. Futomaki Sushi

Ingredients: Sushi rice, nori, dried gourd, egg, shiitake, takuwan, cucumber, sesame, pickled plum, shiso. Allergens: Egg, Sesame.

Important Notice

All alcohol used in our dishes, including sake and mirin,has had its alcohol content fully evaporated during the cooking process.
Despite our careful preparation methods, crosscontamination may occur as all dishes are prepared in a shared kitchen environment. We cannot guarantee that our dishes are free from trace amounts of allergens. We highly recommend that individuals with severe allergies exercise caution and inform our staff of their specific needs.
