At TEWATASHI, we prioritize the safety and well-being of our guests by providing comprehensive information on the ingredients used in our dishes. This includes not only allergens but also ingredients that may be restricted due to dietary preferences or medical conditions. Please review the menu items below along with their ingredients and notify our staff of any dietary restrictions prior to ordering. Where possible, we will modify or substitute dishes accordingly.
Course Menus and Dishes
Kiwami Omakase
This course includes Dishes No. 6, 8, 9, 10, 11, 12, 13, 14, 17, 18 and 21.
Aburi Omakase
This course includes Dishes No. 1, 6, 8, 9, 10, 11, 12, 13, 14 ,16 and 17.
Izakaya Omakase
This course includes Dishes No. 1, 3, 4, 5, 6, 7, 8, 9, 10 ,11 and 17.
Nigiri Omakase
This course includes Dishes No. 1, 6, 7, 8, 9, 10, 11, 12, 13, 14 ,17 and 21.
Menu Items and Ingredients
1. Sashimi
Fresh selection of the day’s raw fish, served with wasabi, soy sauce, and shiso leaf.
2. Grilled Eggplant Soup
Ingredients: Eggplant, kombu dashi (kelp broth), Saikyo miso (soybeans), light soy sauce (soybeans, wheat),salt, olive oil, burrata cheese, blended vinegar (rice vinegar, sugar, salt, kombu).
3. Crab in Vinegar Sauce
Ingredients: Crab, wood ear mushrooms, cucumber, salmon roe, baguette, olive oil, Tosa vinegar (bonito dashi, light soy sauce [soybeans, wheat]), mirin, rice vinegar, gelatin.
4. Chicken Ham
Ingredients: Chicken breast, salt, Hondashi (bonito stock), olive oil, spinach, sesame seeds, light soy sauce (soybeans, wheat), sugar, green onion, ginger, sunflower oil, sesame oil, shichimi pepper, radish.
5. Japanese Rolled Omelette
Ingredients: Eggs, bonito dashi, mirin, light soy sauce (soybeans, wheat), salt, potato starch, seaweed.
6. Lightly Pickled Vegetables
Ingredients: Chinese cabbage, daikon radish, carrot, tomato, radish, kombu dashi (kelp broth), rice vinegar, sugar, soy sauce (soybeans, wheat), salt, MSG, chili pepper.
7. Yakitori Vegetarian
Ingredients: King oyster mushroom (Eryngii), sake, soy sauce (soybeans, wheat), olive oil, sansho pepper.
8. Sushi Rice
Ingredients: Rice, rice vinegar, sugar, salt, kombu.
9. Pickled Ginger
Ingredients: Ginger, rice vinegar, sugar, salt, kombu.
10. Nikiri Soy Sauce
Ingredients: Soy sauce (soybeans, wheat), mirin, sake, kombu.
11. Red Miso Soup
Ingredients: Hatcho miso (soybeans), Inaka miso (soybeans, rice), bonito dashi, tofu.
12. Kuzu Mochi (Japanese Arrowroot Cake)
Ingredients: Kuzu flour, sugar, roasted soybean flour, salt.
13 Red-White Tartar
Ingredients: Tuna, crab, seaweed, soy sauce (soybeans, wheat).
14. Chawanmushi (Japanese Egg Custard)
Ingredients: Eggs, bonito dashi, shrimp, soy sauce (soybeans, wheat), mirin, truffle.
15. Inari Sushi
Ingredients: Tofu, kombu dashi, soy sauce (soybeans, wheat), mirin, sugar, rice, rice vinegar, cucumber, pickled daikon.
16. Sukiyaki
Ingredients: Beef, soy sauce (soybeans, wheat), mirin, sake, green onion, miso, chili pepper, sesame, agar, wheat, soybeans, gelatin.
17. Ebi Shinjo (Prawn Dumpling)
Ingredients: Sea bass, prawn, mushroom, green onion, kombu dashi, potato starch, salt, bonito dashi, light soy sauce.
Allergens: Fish (sea bass, bonito), crustacean (prawn), mushroom, soy.
18. Kaki Carpaccio (Persimmon Carpaccio)
Ingredients: White fish, persimmon, umeshu (plum wine, alcohol cooked off), (kaki no tane - optional).
Allergens: Fish, alcohol (umeshu).
19. Nasu Dengaku (Miso-glazed Eggplant)
Ingredients: Eggplant, red miso (soybeans), egg yolk, sake (alcohol cooked off), sugar, sesame.
Allergens: Soy, egg, sesame, alcohol (sake).
20. Gindara Saikyo Yaki
(Miso-marinated Black Cod)
Ingredients: Black cod, white miso (rice, soybeans), sugar, mirin (alcoholl cooked off), rice vinegar, carrot, daikon radish, umami seasoning, soy sauce.
Allergens: Fish (black cod), soy, alcohol (mirin).
21. Buri Shabu (Amberjack Shabu-Shabu)
Ingredients: Amberjack, daikon radish, ponzu (Mizkan Ajipon - contains soy), kombu dashi, salt, light soy sauce.
Allergens: Fish (amberjack, bonito), soy.
22. Horenso Goma Sashimi
Ingredients: Row white fish SASHIMI, salt, Hondashi (bonito stock), olive oil, spinach, sesame seeds, light soy sauce (soybeans, wheat), sugar, green onion, ginger, sunflower oil, sesame oil, shichimi pepper, radish.
Important Notice
All alcohol used in our dishes, including sake and mirin,has had its alcohol content fully evaporated during the cooking process.
Despite our careful preparation methods, crosscontamination may occur as all dishes are prepared in a shared kitchen environment. We cannot guarantee that our dishes are free from trace amounts of allergens. We highly recommend that individuals with severe allergies exercise caution and inform our staff of their specific needs.
